On hot summer days when you don’t want to heat up the kitchen & it’s too hot to grill, this is my go-to recipe for light, flavorful fare.
Ingredients:
- 1 Can Sustainably Fished Tuna
- 1 Tbsp of Organic Mediterranean Capers
- 1 Tbsp Hot Pepper Relish (to taste)
- ½ Lemon – juiced
- ¼ Cup Extra Virgin Olive Oil
- ¼ Cup Shredded Provolone Cheese (or appropriate cheese substitute)

Directions:
Step 1: Place tuna in a small mixing bowl and flake apart with a fork. Add lemon juice, olive oil, pepper relish, and cheese and mix well.
Step 2: Serve over your favorite salad fixings, in a lettuce wrap or in a sandwich.
Note: I would like to say a few words about hidden food allergens in canned tuna. Some preservatives can contain dairy, gluten, sulfites, or allium allergens. Avoid vague ingredients like natural flavors, spice extractives, spice, broths, artificial flavors, starch, modified food starch, hydrolyzed soy, vegetable, or plant protein, textured vegetable protein, dextrin, maltodextrin, dextrose, glucose syrup, caramel, malt flavoring, malt extract, malt vinegar, brown rice syrup. Most of these ingredients are found in inexpensive tuna. Go for the sustainably fished tuna with less than 3 ingredients listed on the label.
