This makes a big pot of sauce! Invite friends over…

 

Ingredients:

  • ⅓ Cup of Extra Virgin Olive Oil
  • ¾ Cup of Finely Chopped Celery (4-5 Stalks in Food Processor)
  • ½ Cup of Finely Chopped Carrots (2-3 Carrots in Food Processor)
  • ⅓ Cup of Italian Seasoning (Check Ingredients to Insure No Garlic or Onion) I Prefer Trader Joe’s Herbs De Provence
  • 2 cans 28 oz. Tomato Puree
  • 1 can 28 oz. Can Crushed Tomatoes with Basil
  • 2 Cups Water
  • ⅛ Cup Sugar
  • 2 Tbsp Himalayan or Sea Salt
PACK Tomato Sauce

Directions:

Step 1: In an 8 quart or larger stock pot warm olive oil and add celery, carrots and Italian seasoning and sauté for 5mins.

Step 2: Add canned tomatoes, water (2 cups for thicker sauce 4 cups for thinner sauce) sugar, and salt.  Bring to a boil and immediately lower to a simmer. 

Step 3: Simmer for at least an hour, stirring occasionally to make sure sauce does not burn.
