I have days that I just don’t know what to make. Often, I will open the fridge/freezer for inspiration. I most always have eggs and some kind of cheese. I love the Wholly Gluten Free frozen pie crusts and keep them stocked in my freezer. What can you make with eggs, cheese and pie shell? Quiche! Quiche is a quick and easy meal for breakfast, lunch or dinner. I will continue my hunt through the fridge for veggies and proteins to add and Viola, a meal! Get creative, there are so many combinations that taste great. From start to finish, a meal made in less than an hour.

Ingredients:

  • 1 Gluten-Free Ready-Made Frozen Pie Shell in a Foil Pan 
  • 4 Eggs (or Equivalent Plant Based Substitute)
  • ¾ Cup of Diced Cooked Chicken or Other Protein (Optional)
  • 1 Cup of Chopped Veggies of Your Choice. I Like Peppers, Spinach, Zucchini, and Tomato
  • ½ to ¾ Cup of Shredded Cheese Like Cheddar or Plant Based Substitute
  • 1/3 Cup Milk or Plant Based Substitute
  • 1 Tbsp Olive Oil
  • ½ tsp Salt
  • ½ tsp Pepper
  • 1 Dash Cayenne Pepper to Taste (Optional)
  • 1 Dash of Nutmeg (Optional)
Eggplant Caponata

Directions:

Step 1: Preheat oven to 350 degrees and thaw pie crust according to package directions.

Step 2: Sauté chopped vegetables in olive oil until slightly soft for about 5 minutes then stir in the chicken and remove from heat.

Step 3: Place sautéed veggies with chicken in bottom of pie crust and spread evenly. Top with cheese.

Step 4: In a small mixing bowl, crack eggs, add milk and spices and whisk until combined.

Step 5: Place pie shell with veggies, chicken and cheese on a baking sheet and gently pour the egg mixture over the ingredients in the shell. It will take time for the egg mixture to penetrate evenly.

Step 6: Bake quiche for 30 minutes and check for doneness. The crust should be golden brown and egg mixture solid and lightly toasted looking.

Options:

Crust-less quiche:

Spray a glass or metal nine- inch pie pan with cooking spray and follow directions omitting pie crust. Increase to 5 eggs and cooking time may need to be decreased by 5-10 minutes

Sweet Potato and Oatmeal Gluten Free Crust

Ingredients:

  • 1 medium sweet peeled and cut in chunks
  • 1 egg or substitute
  • ¾ Cup Rolled Oats (Gluten Free quick oats work best)
  • ½ tsp salt
  • ¼ tsp pepper

Directions:

Step 1: Preheat oven to 400 degrees and spray 9 inch pie pan with non-stick cooking spray.

Step 2: Mix all ingredients in a food processor (If no food processor, shred potatoes and mix ingredients by hand) Spread mixture into greased pie pan, covering bottom and sides. Press firmly to form the crust and bake on center rack for 20 minutes.

Step 3: Reduce heat to 350 degrees and follow quiche recipe from Step 3
