Have you ever gotten a last-minute invite and you need to bring something to share? This no bake dessert can be ready in 40 minutes or less and there is no baking involved! It’s Vegan, dairy, egg and gluten free and can be adapted for those with nut allergies. I call it the Power of Three since 3 is repeated so much in the ingredients list. I often double the recipe so it should be called the Power of Six! This recipe makes about 1 ½ dozen balls.
Ingredients:

  • 3 Tbsp Organic Banana Flour/Almond Flour or other GF Flour
  • 3 Tbsp Organic Coconut Oil
  • 1 ½ Tbsp Cocoa Powder
  • 3 Tbsp Nut or Seed Butter
  • 3 Tbsp Liquid Sweetener like Honey, Maple Syrup or Agave Nectar
  • 3 Tbsp Chopped Nuts (optional: seeds, Raisins, or other dried fruit)
  • 3 Tbsp Shredded Coconut or GF crushed pretzels (optional) on a plate

Directions:

Step 1: In a medium size bowl, combine all ingredients except the shredded coconut/pretzels by mixing with a spoon or spatula.

Step 2: Check batter consistency. If batter is too sticky or thin, refrigerate for 15 minutes.

Step 3: Spoon a Tbsp of the batter into your hands and shape batter into a ball. Roll the ball in the coconut or crushed GF pretzels and place on a plate or parchment covered baking sheet.

Step 4: Refrigerate balls for at least 30 minutes until set.
