This goes great with a big pot of PACK Tomato Sauce included in our recipes.
Ingredients:
- 2 lbs Ground Turkey or Ground Meat of Your Choice (Organic Is Preferable)
- 2 Eggs
- ½ Cup of Sautéed Celery and Carrot
- 2 Tbsp Italian Seasoning Mixture or Herbs De Provence
- ⅓ Cup of Cornflake Crumbs or Other Gluten Free Breadcrumbs
- 1 tsp Salt
- ½ tsp Pepper

Directions:
Step 1: Set aside a bowl of water to be used for rinsing hands while forming meatballs.
Step 2: Combine all ingredients in a bowl and mix well. Form spoonsful of mixture into the size meatballs you want to serve. Wetting your hands helps to keep the meatball mixture from sticking to your hands.
Step 3: Drop the meatballs into the simmering sauce one at a time making sure to leave space between each meatball you drop into the sauce. Simmer the meatballs until they begin to float, approximately 10 mins. DO NOT STIR meatballs until they are floating, or they will break apart. If you prefer to cook your meatballs separately, meatballs can be fried in a small amount of oil or baked on a greased baking sheet for 20 minutes in a 350-degree oven. Then add to sauce.
Step 4: Allow sauce and meatballs to simmer for at least an hour gently stirring carefully to insure meatballs don’t break apart and sauce doesn’t burn.
Cooked sausage can be added to the sauce also. Be cautious when choosing meat. Often ingredients like natural flavoring, spice, spice extractives contain onions, garlic and gluten.
