Summer harvests lend to tasty salads! Caprese is one of the most simple and delectable salads. A favorite in Italy for a good reason. The melding of the flavors and textures of a beautifully ripe, fresh tomato combined with basil, firm cheese, the sweet acidic nature of the balsamic glaze and a good extra virgin olive oil can be a meal unto itself or an awesome side dish to any summer meal.
Ingredients:
- 1 Large Farm or Garden-Fresh Tomato Cut Into 4 ¼ – ½ Inch Slices
- 4 ¼ – ½ Inch Slices of Fresh Mozzarella or Goat Cheese (or Your Favorite Cheese Substitute)
- 4 Fresh Basil Leaves
- 1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Balsamic Glaze
- 1 Cup Spring Mix Greens

Directions
Step 1: Spread Spring Mix on a plate.
Step 2: Place the tomato slices on top of the Spring Mix
Step 3: Place the Cheese on top of the tomato slices
Step 4: Place the Basil on top of the cheese
Step 5: Sprinkle the Olive oil on top of basil
Step 6: Swirl the balsamic glaze on top of the Olive Oil
